My name is Elizabeth, I am a Registered Dietitian with a Master of Science in Nutrition, Healthspan, and Longevity. In my undergrad, I was an Aggie at UC Davis, where I studied Clinical Nutrition. In my graduate program, I embraced Trojan life at USC. Now, I am happy to say I have found my home as a Triton at UC San Diego!
I am a passionate and dedicated Dietitian committed to guiding college students on their journey toward a healthier and more balanced lifestyle. To me, nutrition is not only about what we restrict or limit in the diet but rather about embracing an abundance mindset. When working with my clients, I choose to focus on a diet that is satisfying, nutritious, realistic, and sustainable for you and your busy lifestyle while also including beneficial nutrients. I find that the happiest and healthiest folks are the ones who find ways to embody "Nutrition by Addition" in their everyday routine, rather than live by restriction only. This leads to long-term results and habits that you can carry with you beyond your time at UCSD.
I specialize in providing personalized and practical nutrition counseling to empower students, Recreation members, and WorkStrong participants alike to make informed choices about their food and movement. Navigating the challenges of college life and beyond can be demanding, but together, we'll explore delicious and nourishing solutions tailored to your unique needs. After all, nourishing both your mind and body is the first step towards achieving your academic and personal goals. Eating healthy doesn't have to be boring – let's make it fun! In this workshop, learn the basics of meal planning so that you can be an expert at preparing more of your own meals at home. These workshops are customized based on the interests of the group. Details will be discussed by the Dietitian and the presentation organizer by phone, email or meeting.
